How to Use Cassava Flour

It's Easy to swap out Otto's for All-Purpose Flour!

We often get asked - "What’s the easiest way to convert traditional all-purpose flour recipes with Otto’s?" If this sounds like you, check out our suggestions below!
Happy Baking!

Otto’s is a great one-to-one replacement for all-purpose flour especially by weight. One cup of all-purpose flour weighs about 120 grams. If you sub in an equal weight of Otto’s, using a digital scale, most recipes will turn out great (FYI this method does not work with yeast-based recipes, though we have several fantastic ones already optimized for you on our recipes page)!

If you don’t have a scale you can sift well before scooping (or stir it really well with a whisk before each scoop) and measure out the same amount of flour your recipe calls for. Pro tip: Flour can weigh itself down so using 4 x ¼ cup scoops to make 1 cup will usually give you a more accurate result.

If you don’t have a sifter or a scale you can just use ¾ cup of Otto’s per 1 cup of AP flour called for in your recipe and don’t worry about sifting or stirring. Just scoop right out of the bag!

As with all baking - weather, elevation, and brands of ingredients can all be HUGE factors in how your end product turns out. Pro tip: If your recipe ever turns out on the dry side, try reducing the flour instead of adding more liquid next time.

We’re always here to help troubleshoot with you or lend a hand in figuring out how to convert any of our recipes to your particular allergies or preferences. Just ask!
